How do I prepare the Biscotto stone before first use?

1. Wipe the smooth surface of the biscotto stone with a minimally damp cloth to remove any dust from production.

2. Place the biscotto stone in the oven and set it to the lowest temperature for 20 minutes. Turn off the heat and let the stone cool completely.

3. Heat the biscotto stone at medium temperature for 20 minutes. Turn off the heat and let it cool completely.

4. Finally, heat the biscotto stone at high temperature for 20 minutes. Turn off the heat and let it cool completely.

The Biscotto stone is now ready for baking!

Note: This is for the first time use only or if you kept the stone outside during winter.

How should I clean the Biscotto stone?

1. Use a soft metal brush to gently remove any baked-on residue.

2. For tougher stains or residue, you can burn off the remains by heating the Biscotto stone at the highest oven temperature.

3. Never wash the Biscotto stone, as it will cause damage.

What is the correct surface to bake on?

Always use the smooth surface of the Biscotto stone for baking.

Can the stone be stored outdoors?

The Biscotto stone can be left inside an outdoor oven, but if the oven is covered, condensation may form and make the Biscotto stone wet. When you heat the oven, this moisture can cause a sudden temperature change—called temperature shock—which may cause the stone to crack - therefore make sure your Biscotto stone is cold when you cover the oven. Some people experience cracking when they leave their ovens outside during the winter, so it’s recommended to bring the Biscotto stone indoors during colder months or extended periods of disuse.

Can the stone be cut?

Yes, the Biscotto stone can be cut to size quite easily using common tools such as an angle grinder or a Dremel. The disc that typically comes included with a Dremel or grinder is often a standard fiberglass-reinforced cutting disc, which can be used effectively for this purpose. You can also use a diamond cutting disc.

What is the maximum temperature I can bake on the Biscotto stone ?

You can safely bake on our Biscotto stones at temperatures around 480°C (896°F). While it’s possible to push it to 500°C (932°F), it’s generally unnecessary for most baking purposes and won’t significantly improve your results. For neapolitan pizza, we recommend 460-470c.

How do I know if your Biscotto stone is authentic?

You can test the authenticity by baking on the Biscotto stone at 450–480°C (842–896°F) and observing the perfect leopard spots on your pizza crust. Unlike lower-quality stones, our Biscotto stone won’t burn the bottom of your pizza before it’s fully cooked. Our Biscotto stones also retain heat much better, allowing you to bake pizzas faster because the Biscotto stone reaches and maintains the correct temperature more efficiently. Having sold hundreds of Biscotto stones with zero complaints about quality, we are confident you will receive only the best.

How thick is the Biscotto stones?

The listed thickness on the product page is an average measurement. Since each Biscotto stone is handcrafted, slight variations in thickness are normal—some stones may be a bit thicker or thinner. These differences do not affect performance in any way and are a natural result of traditional artisan production.

Do you offer bulk discounts?

Yes, contact us at support@saputobiscotto.com for custom pricing.

Tip: Avoid Temperature Shock

If the Biscotto stone has been stored outside ( Covered ) or you live in a high-humidity area, it’s a good idea to let it warm gradually. Preheating the stone for 10 minutes at the lowest temperature setting before baking can help evaporate any moisture and prevent sudden temperature changes that might cause cracking.

This step is optional, but it adds an extra layer of protection—especially in damp conditions.

Is there a difference between your Biscotto stones?

We work with trusted suppliers to provide premium Biscotto stones, including Saputo and others of equally high quality. In some cases, depending on availability, you may receive a stone from a different artisan source. Both types perform equally well—we’ve sold hundreds of each without a single complaint.

We use both stones ourselves in a variety of ovens and have tested them extensively. Both hold heat exceptionally well, deliver beautiful leopard spotting on your pizza, and never burn the bottom before the top is fully cooked. There is truly no difference in baking performance. Rest assured, all our Biscotto stones are carefully selected for top results, and your satisfaction is fully guaranteed.
